Food safety in choosing edible ice products: An approach from manufacturers to consumers in Binh Duong province

A cross - sectional study was conducted in Binh Duong province in 2021, involving 38 ice production facilities, 455 ice business establishments (using a systematic random sampling method), and 910 consumers (convenience sample). Results showed that only 50% of ice production facilities and 45.5% of ice business establishments met the food safety conditions. The correct knowledge rates regarding food safety were low among producers (31.8%), business owners (9.5%), and consumers (6.9%). There was a correlation between the food safety conditions of production facilities and the knowledge of producers (PR = 2.5; 95% CI (1.4 - 4.3); p = 0.007). Additionally, a positive correlation was observed between the knowledge of business owners and the food safety conditions of the facilities (PR = 1.8; 95% CI (1.4 - 2.2); p < 0.001). The study results demonstrated the significant role and interconnection of practical experience and knowledge of food safety among ice producers, business owners, and consumers. Production and business facilities need to enhance their food safety conditions, while ice consumers should be equipped with knowledge about ice food safety.
