The reality and related factors arrive conditions guarantee to food safety at the restaurants within hotels in Thanh Hoa province, 2022

A cross - sectional study with aimed to identify the reality and related factors arrive conditions guarantee to food safety at the restaurants within hotels in thanh hoa province was conducted on 87 samples of instant foods and 348 people (87 managers and 261 people of food processing) at 87 restaurants within hotels in Thanh Hoa province. The study showed that: 11.5% of instant foodsat at 87 the restaurants within hotels are contaiminated (over the acceptibility limit) for Coliform, Escherichia coli and Staphylococcus aureus; the percentage of food samples contaminated both Coliform, E. coli and S.aureus are 1.2%, only contaminated Coliform are 4.6%, only E. coli are 2.3% and only S.aureus are 1.2%; have 10.0% food samples from meat and meat products, 15.6% food samples from seafood and 8.0% food samples from other products are contaiminated. 73.6% of the restaurants within hotels meet the requirements about food safety guarantee, in which 80.5% meet the premises conditions, 77.0% meet the equipment, tools, 79.3% meet the people and 72.4% meet the food preservation conditions. The right knowledge and practice of people managers and people of food processing is 77.3% and 75.9% (which right knowledge and practice of people managers is 78.2% and 77.0%; people of food processing is 77.0% and 75.5%).
