Adherence to regulations and some factors affecting the food safety of collective kitchens at schools in Can Tho city in 2022

Abstract

A cross - sectional descriptive study, combining quantitative and qualitative, was carried out on 207 collective kitchens and 207 chefs including in-depth interviews on 10 managers and 12 chefs at schools in 3 districts of Ninh Kieu, Binh Thuy and Cai Rang, Can Tho city in 2022. The objectives of the study was in order to descrie the regulatory adherence and identify some factors affecting the food safety of the school collective kitchens. The results showed that the percentage of kitchens adherence to food safety regulations is 56.5%, of which condition the infrastructure of facilities reached 72.0%, equipment and tools reached 61.8%, knowledge and practice of food safety of the chefs reached 66.7% and 64.7% respectively. Some factors affecting adherence to food safety regulations include: educational level (OR = 2.8; 95%, CI: 1.55 - 5.05); working seniority (OR = 2.2; 95% CI: 1.22 - 4.08); training in food processing (OR = 2.6; 95% CI: 1.44 - 4.53); access to information on food safety (OR = 2.5; 95% CI: 1.27 - 4.86); frequency of testing, monitoring on food safety (OR = 2.7; 95% CI: 1.46 - 4.94), knowledge (OR = 5.2; 95% CI: 2.79 - 9.79) and practice (OR = 1.9; 95% CI: 1.05 - 3.33) of the chef on food safety.
